Cupcakes

Okay, so I've been asked by a few people to post the Weight Watchers method of cake baking. It's really easy and tasty as well.

Typically, you use a cake mix and one can of diet pop (yes I said pop, deal with it). That's it. Light colored pop for light colored cake mixes, dark pop for dark cake mixes. Pour the pop into the cake mix, mix and bake according to the cake mix directions. That's it. No eggs, oil, or water.

I made cupcakes last week using a white cake mix and 12oz of Strawberry-Orange-Banana Crystal Light. Yummy. Works out to about 1-2 pts per cupcake depending on how full you fill the liners. I like to dust mine with powdered sugar. The kids loved them and no one will know it's not regular cake unless you tell them. I've found that the cake doesn't rise much when made in a 9x12 cake pan or bundt pan, but the cupcakes did rise like normal. I'm not sure if the diet pop has anything to do with the failure to rise or not since I've never used Crystal Light to make a regular cake, just the cupcakes this one time. I'll test that theory next time.

My little experiment proves that any diet drink will work. Mix and match. Have some fun with food!
